This weekend turned out to be super chilly! Overcast skies and cold winds made for a stay-at-home-gloomy-watch tv Sunday. I whipped up my favorite guacamole dip and enjoyed some Food Network programs such as Ina Garten's Barefoot Contessa, Gia DeLaurentiis's Cooking at Home, Chef Jeff Project, Dinner: Impossible with Robert Irvine, etc...
I love guacamole! I learned that guacamole is of Aztec origin and was originally valued for its high fat and vitamin content. It was originally made by mashing the avocado with a molcajete (a type of mortar and pestle) and adding tomatoes and salt. After the arrival of the Spanishh conquistadors, guacamole became popular in Spain. Since avocados failed to grow well in Spain guacamole remained an American food. The name guacamole comes from Mexican Spanish. ~ from Wikipedia
The following is my guacamole recipe:
makes 1 bowl
1 large ripe avocado
1/2 cup chopped tomatoes
1/2 cup diced red onions
4 tbsp chopped cilantro
1 tsp cumin
1 tbp lime juice
1 tsp paprika
1 tsp salt
directions: mash the avocado and add lime juice to avoid the 'browning process.' Add the tomatoes, onions, cilantro and spices. Mix well together and refridgerate for 1 hour before serving with your favorite tortilla chips!
